Soulfrito Chix and Veggie
*2-5 lbs Chicken (whatever pieces are your favs) Not into Chicken- replace with any meat or fish, or just overload on veggies
*1-3 lbs of vegetable (diced, anything from potatoes, tomatoes, asparagus, or spinach)
*5 T Soulfrito
Mix vegetables together with chicken add Soulfrito and mix until all incorporated. Set in fridge for 1-2 hours (for better results marinate longer). Place chicken in vegetables into individual aluminum pouches (as seen in picture), and bake on oven pan for 45 minutes depending on the cut of meat. Once done each pouch is its own meal, left overs can be reheated for lunch or dinner the next day......Yes this is a pretty simple recipe.
