Here are some helpful potato hints to ensure you are picking the right potato for the job.

There are three types of potatoes you have starchy, waxy and all purpose. Starchy potatoes like the Russet (Idaho) potato don't hold themselves together under heat. They are the light and fluffy of the potato family, good for mashed potatoes, and chips. Due to its lightness it does not play well when you play with it to much. The more you mash the more it turns gluey.

The waxy potatoes can put up a good fight. They hold their shape and texture well under heat. This type of potato is perfect for stews and soups and salads. It is the perfect potato for roasting.

The all purpose potato plays well in any type of conditions. Multipurpose user.

Here is a simple roasted potato recipe using fingerling potatoes. You should consider roasting your potatoes this Thanksgiving. It is a healthier alternative to mashed potatoes which adds lots of fat and diary to the potato. When roasting you are not adding much and keeping the potato as healthy as possible.

Roasted fingerlings

1.5 lbs fingerling potatoes washed

2 t Soulfrito

7 sprigs of thyme (picked and minced)

1 t pepper

2 T Olive oil or butter

3 t Garlic

Combine all ingredients. Toss in a bowl to ensure well incorporated. Place on sheet tray and bake for 25 minutes on 400 degrees. Serve hot.
