Rajun Cajun


Another simple slow cooker dish for all the busy people out there. This Cajun, spicy warm stew is an excellent complement to rice or any type of pasta, if you want to be really adventurous, try it with orzo pasta. Simple, warm, with a touch of spice....great for the not so warm nights to come.

Cajun Shrimp and Sausage

1.5 lbs of Shrimp

2 lbs of Sausage (try Andouille, smoked sausage or even a great Chicken Sausage)

1 cup of chopped Green Peppers (big pieces to stand the long cooking time)

1 cup of chopped Onion (big pieces to maintain integrity for the long cooking process)

2 cups sliced celery (big pieces)

1 T minced Garlic

2 T Soulfrito

1 cup Chicken broth or vegetable broth

1 Can tomato sauce (your preference- nice organic does great)

1 t Salt and pepper

1.5 t Cajun Seasoning

1 t Red pepper flakes ( add more if you like it hotter)

Combine all the vegetables, sausage and shrimp with all the seasonings and Soulfrito. This is to ensure that you season everything so that as it cooks it the flavors dig deep into the food. Add the tomato sauce and Broth and stir. Cook on low for 2-3 hours- over cooking will make shrimp rubbery and veggies dull in color. Serve over rice or pasta. Enjoy!
