Zuppa Toscana

Hey y'all! I love, love, love Olive Garden's soup and breadsticks. with Covid we have not been able to go out to eat as much as we would like. So I have been craving this potato sausage soup I get there. Well, i decided to give it a try, and it came out perfect. If you love this soup too here is the recipe I used. Ingredients

1 lb of sausage (which ever is your go to)

4 slices of bacon cut into lardons (optional)

1/2 cup diced onion

2 TB flour

24 oz of veggie stock ( or your preferred stock)

5 Yellow Potatoes

1 cup milk

2 handfuls of kale cut into small pieces

1 tsp garlic salt

2 tsp Souldobo

touch of pepper

red pepper flakes if you like


First step is to brown the sausage, then set aside, then brown the bacon- leave the grease inside. Add the onion and sauté in the bacon grease (yum). Add the seasoning and flour and mix together well. Add bacon, potatoes, milk and broth and stir until everything is happy together. Simmer on low for about 25-30 minutes until potatoes are cooked but not too soft. Add the kale and sausage, simmer on low for about 15 minutes longer. Serve with some fresh grated cheese and wine, to make you feel like you are actually in Olive Garden.
