A spoonful of.....................Soulfrito

It's amazing what a spoonful of Soulfrito can do to a dish, a recipe and a stew but that's why it is so awesome. Here is a simple potato recipe that uses just a spoonful of soulfrito to make the dish party in your mouth worthy.

Mashed Soulfrito Potatoes

2 lbs Potatoes (Yukon Gold Work Best)

1 can diced tomatoes

1 SPOONFUL (1 T) Soulfrito

2 T butter

few sprigs of cilantro chopped

1/3 cup milk (this can be substituted for more tomatoes)

salt and pepper to taste

Boil the potatoes until tender, add milk and butter. Sautee tomatoes sofrito, salt and pepper until heated and combined. Combine both mixtures. Season to taste stir in cilantro and Enjoy.

Roasted Soulfrito Potatoes

2 lbs baby Red Potatoes

salt and pepper to taste

1 SPOONFUL of (1 T) Soulfrito

1 tsp minced garlic

4 T olive oil

Salt and pepper to taste

Mix all ingredients and roast in oven on 375 for 35 minutes or until golden brown and soft.
